They eat vegan and refrain from ethical or health reasons to dairy products? If, however, you like milk and cheese, you do not necessarily have to remove it from your diet. There are now alternatives to cheese in all possible variations. We have compiled some recipes for the vegetable cheese substitute for you, because vegetarian cheese is versatile and tastes delicious.

What is vegan cheese made of?

Essentially, the vegan cheese substitutes are based on water, vegetable oils, such as coconut oil, palm oil, and vegetable starch. Soy, tofu, processed nuts or cereals and yeast are also often contained in the herbal products.

Vegan cheese belongs to the assortment of health food stores, vegan supermarkets and reform houses and is becoming increasingly popular. If you want to try something new in the kitchen, you can make your vegan cheese at home and develop your own creations.

Vegan sliced cheese

The popular vegetable cheese slices for bread or just for snacking, which is very close to the real cheese taste, you can easily imitate with these ingredients at home:

  • 1 sweet potato
  • 1 small cup of cashews
  • 3 tbsp yeast flakes
  • Juice of a half lemon
  • Pepper powder
  • Cumin Powder
  • salt and pepper
  • 4 tsp agar agar + some water to stir

Vegan cheese – to make your own variety

Heat the margarine in a saucepan and add the flour. As soon as you get a smooth sweat, you can slowly add 150 ml of water and boil the liquid under constant stirring. Take the pot from the stove and add the salt and the mustard. Including stir the yeast flakes and mix them with the remaining water. Re-boil the liquid until you reach a cheesy consistency.

Vegan Parmesan

Also as a vegan you do not have to do without the spicy Parmesan to your rice or pasta dishes. You can produce hard cheese quickly with these few ingredients:

  • 100 g almonds or pine nuts
  • 25 g yeast flakes

Refine with spicy Parmesan dishes

  • 15 g bread crumbs
  • salt and pepper

Roast the nuts without skin in a pan and crush them in the blender or mortar. Add the remaining ingredients and sprinkle the finished Parmesan cheese over your dish.

Vegan mozzarella without yeast flakes

Within a short period of time you can also make vegan mozzarella at home, making a tasty tomato mozzarella salad or even baking it. For the preparation you need the following ingredients:

  • 120 ml soy milk
  • 2 tablespoons soya yogurt, natural
  • 2 tbsp of potato starch or tapioca

Vegetable mozzarella lightly prepared

  • 1 tablespoon vegan margarine
  • 3 tablespoons oil
  • salt

Place the potato starch and the soy milk in a pot and bring the liquid to the boil while stirring constantly. Now you can add the remaining ingredients and heat the cheese mixture for a further 5 minutes at low heat until it draws threads and settles from the pot bottom. Place vegan mozzarella in a lightly greased form and refrigerate overnight in the refrigerator.

Fast vegan cheese

For the small meals between or if it is to go quite quickly, a vegan stir-fry is prepared, which is turned around. The ingredients you need are:

  • 100 g of tofu
  • 50 g of neutral oil, such as, for example, rapeseed, sunflower or safflower oil
  • 50 ml soy milk

  • 200 g of cashew kernels
  • 100 ml of water
  • 1 teaspoon of lime juice

Soak the cashew nuts in the water overnight and mix them the next day in a blender until you get a spreadable cream. Add the lime juice and the spices and enjoy the delicious spread on bread or as a base for sauces.

Vegan substitute for feta cheese

If you want to enrich your vegan barbecue dinner with a herbal cheese, a mild-spicy, vegan feta based on soy milk is an excellent addition. For the cheese you need:

  • 2 L Sojamilch
  • Juice of 2 lemons
  • 1 teaspoon salt
  • 1/2 TL Garam Masala Spice mixture
  • Bunch Garden herbs (eg chives, wild garlic, etc.)

Marinated feta cheese for salad

Bring the soy milk to the boil with the salt and Garam Masala and stir the lemon juice into the lightly boiling soy milk. The liquid then begins to flocculate. Soy milk simmer for 3-4 minutes with constant stirring. Then let the cheese drip well through a sieve equipped with a dishwasher cloth.

Homemade Herbal Feta

Beat the cloth over the cheese mixture and squeeze out the cheese. Then mix the finely chopped herbs under the curd. Now you can mold cheese blocks with the help of the fresh-keeping foil. In foil wrapped leave them in the refrigerator overnight. Place a cutting board on the cheese so that the blocks remain in shape and solidify. The herbal feta can be served grilled with salad.
